Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup water
  • 1 pound plums, pitted and chopped
  • 1/4 cup sugar

Instructions

  1. In a large bowl, mix the flour and salt. Add the egg and water, and knead the dough until smooth. Cover and let it rest for 30 minutes.
  2. In a separate bowl, combine the chopped plums and sugar.
  3. Roll out the dough on a floured surface and cut out circles using a glass or cookie cutter.
  4. Place a spoonful of the plum filling in the center of each circle. Fold the dough over the filling and press the edges to seal.
  5. Boil the pierogi in a large pot of salted water for 3-4 minutes, or until they float to the surface.
  6. Remove the pierogi with a slotted spoon and serve hot, optionally with a sprinkle of sugar or a dollop of sour cream.
