Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 large egg
- 1/2 cup water
- 1 pound plums, pitted and chopped
- 1/4 cup sugar
Instructions
- In a large bowl, mix the flour and salt. Add the egg and water, and knead the dough until smooth. Cover and let it rest for 30 minutes.
- In a separate bowl, combine the chopped plums and sugar.
- Roll out the dough on a floured surface and cut out circles using a glass or cookie cutter.
- Place a spoonful of the plum filling in the center of each circle. Fold the dough over the filling and press the edges to seal.
- Boil the pierogi in a large pot of salted water for 3-4 minutes, or until they float to the surface.
- Remove the pierogi with a slotted spoon and serve hot, optionally with a sprinkle of sugar or a dollop of sour cream.
