Ingredients
- 4 large tomatoes
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Cut the tops off the tomatoes and scoop out the insides. Sprinkle the insides with salt and pepper and place them upside down on a paper towel to drain.
- In a bowl, mix together the breadcrumbs, Parmesan cheese, garlic, parsley, and olive oil. Season with salt and pepper.
- Preheat the oven to 375°F (190°C).
- Stuff the tomato cavities with the breadcrumb mixture and place them in a baking dish.
- Bake for 30-35 minutes, until the tomatoes are tender and the filling is golden brown.
