Ingredients

  • 4 large tomatoes
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Cut the tops off the tomatoes and scoop out the insides. Sprinkle the insides with salt and pepper and place them upside down on a paper towel to drain.
  2. In a bowl, mix together the breadcrumbs, Parmesan cheese, garlic, parsley, and olive oil. Season with salt and pepper.
  3. Preheat the oven to 375°F (190°C).
  4. Stuff the tomato cavities with the breadcrumb mixture and place them in a baking dish.
  5. Bake for 30-35 minutes, until the tomatoes are tender and the filling is golden brown.
  6. Serve hot and enjoy!
