Ingredients

  • 4 large tomatoes
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese

  • 2 tablespoons chopped fresh basil
  • 2 tablespoons chopped fresh parsley
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  2. Cut the tops off the tomatoes and scoop out the seeds and pulp. Sprinkle the insides with salt and pepper and place them upside down on a paper towel to drain.
