Pondu (fried Tilapia With Cassava Fufu)

Ingredients
- 4 tilapia fillets
- 2 cups cassava flour
- 1 onion, finely chopped
- 3 tomatoes, diced
- 1 cup palm oil
- 2 cups water
- Salt and pepper to taste
Instructions
- Season the tilapia fillets with salt and pepper.
- In a large skillet, heat the palm oil over medium heat.
- Fry the tilapia fillets until golden brown on both sides, then remove from the skillet and set aside.
- In the same skillet, sauté the chopped onion and diced tomatoes until softened.
- Add the water and bring to a simmer.
- Gently place the fried tilapia fillets into the simmering sauce and let it cook for 10 minutes.
- In a separate pot, bring 4 cups of water to a boil.
- Add the cassava flour to the boiling water and stir continuously until a smooth, thick fufu is formed.
- Divide the cassava fufu into individual portions and serve alongside the fried tilapia and sauce.
