Pondu (fried Tilapia With Cassava Fufu)

Ingredients

  • 4 tilapia fillets
  • 2 cups cassava flour
  • 1 onion, finely chopped
  • 3 tomatoes, diced
  • 1 cup palm oil
  • 2 cups water
  • Salt and pepper to taste

Instructions

  1. Season the tilapia fillets with salt and pepper.
  2. In a large skillet, heat the palm oil over medium heat.
  3. Fry the tilapia fillets until golden brown on both sides, then remove from the skillet and set aside.
  4. In the same skillet, sauté the chopped onion and diced tomatoes until softened.
  5. Add the water and bring to a simmer.
  6. Gently place the fried tilapia fillets into the simmering sauce and let it cook for 10 minutes.
  7. In a separate pot, bring 4 cups of water to a boil.
  8. Add the cassava flour to the boiling water and stir continuously until a smooth, thick fufu is formed.
  9. Divide the cassava fufu into individual portions and serve alongside the fried tilapia and sauce.
