Pontic Style Stuffed Mushrooms (Ποντιακά Γεμιστά Μανιτάρια)

Ingredients

  • 12 large mushrooms, stems removed and reserved
  • 1/2 cup cooked rice
  • 200g ground meat (beef or lamb)
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1/4 cup chopped parsley
  • 1/4 cup chopped dill
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Finely chop the reserved mushroom stems.
  3. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
  4. Add the ground meat and chopped mushroom stems to the skillet. Cook until the meat is browned.
  5. Stir in the cooked rice, parsley, and dill. Season with salt and pepper.
  6. Remove the skillet from the heat and let the mixture cool slightly.
  7. Fill each mushroom cap with the meat and rice mixture, mounding it slightly.
  8. Place the stuffed mushrooms in a baking dish, drizzle with the remaining olive oil, and bake for 30-35 minutes, or until the mushrooms are tender.
  9. Serve the Pontic Style Stuffed Mushrooms hot as an appetizer.
