Pontic Style Stuffed Squid (Ποντιακά Γεμιστά Καλαμάρια)

Ingredients

  • 4 medium-sized squid, cleaned and tentacles removed
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1/4 cup chopped parsley
  • 1/4 cup chopped dill
  • 1/4 cup olive oil
  • 1 lemon, juiced
  • Salt and pepper to taste

Instructions

  1. Prepare the stuffing by mixing the cooked rice, chopped onion, diced tomatoes, parsley, dill, olive oil, lemon juice, salt, and pepper in a bowl.
  2. Stuff the squid with the prepared mixture and secure the openings with toothpicks.
  3. Heat some olive oil in a large skillet over medium heat.
  4. Add the stuffed squid to the skillet and cook for 5-6 minutes on each side, or until the squid is cooked through and lightly browned.
  5. Remove the toothpicks before serving.
