Ingredients
- 4 medium-sized squid, cleaned and tentacles removed
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1/4 cup chopped parsley
- 1/4 cup chopped dill
- 1/4 cup olive oil
- 1 lemon, juiced
- Salt and pepper to taste
Instructions
- Prepare the stuffing by mixing the cooked rice, chopped onion, diced tomatoes, parsley, dill, olive oil, lemon juice, salt, and pepper in a bowl.
- Stuff the squid with the prepared mixture and secure the openings with toothpicks.
- Heat some olive oil in a large skillet over medium heat.
- Add the stuffed squid to the skillet and cook for 5-6 minutes on each side, or until the squid is cooked through and lightly browned.
- Remove the toothpicks before serving.
