Popiah (薄饼卷)
Popiah is a popular Malaysian Chinese fresh spring roll that is filled with a variety of fresh and flavorful ingredients. It's a delicious and healthy dish that is perfect for any occasion.
Ingredients
- 8 popiah skins
- 200g jicama, julienned
- 100g carrots, julienned
- 100g French beans, julienned
- 100g tofu, sliced into strips
- 4 eggs, beaten
- 8 lettuce leaves
- 1 cup bean sprouts
- 1/2 cup fried shallots
- 1/2 cup hoisin sauce
- 1/2 cup sweet sauce
- 1/2 cup ground peanuts
Instructions
- Heat a non-stick pan over medium heat and pour in the beaten eggs to make thin omelettes. Set aside.
- Soften the popiah skins by steaming them for a few minutes or microwaving them for 10 seconds.
- Place a piece of lettuce on each popiah skin, followed by the jicama, carrots, French beans, tofu, bean sprouts, fried shallots, ground peanuts, hoisin sauce, and sweet sauce.
- Roll up the popiah, tucking in the sides as you go, and place a piece of omelette inside each roll.
- Serve the popiah with extra hoisin and sweet sauce on the side.
