Popiah (薄饼卷)

Ingredients

  • 8 popiah skins
  • 200g jicama, julienned
  • 100g carrots, julienned
  • 100g French beans, julienned
  • 100g tofu, sliced into strips
  • 4 eggs, beaten
  • 8 lettuce leaves
  • 1 cup bean sprouts
  • 1/2 cup fried shallots
  • 1/2 cup hoisin sauce
  • 1/2 cup sweet sauce
  • 1/2 cup ground peanuts

Instructions

  1. Heat a non-stick pan over medium heat and pour in the beaten eggs to make thin omelettes. Set aside.
  2. Soften the popiah skins by steaming them for a few minutes or microwaving them for 10 seconds.
  3. Place a piece of lettuce on each popiah skin, followed by the jicama, carrots, French beans, tofu, bean sprouts, fried shallots, ground peanuts, hoisin sauce, and sweet sauce.
  4. Roll up the popiah, tucking in the sides as you go, and place a piece of omelette inside each roll.
  5. Serve the popiah with extra hoisin and sweet sauce on the side.
