Ingredients

  • 1 small pumpkin, peeled and diced
  • 1 can (400ml) coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion and garlic until fragrant.
  2. Add the diced pumpkin and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes or until the pumpkin is tender.
  3. Stir in the coconut milk and simmer for an additional 5 minutes.
  4. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
  5. Season with salt and pepper to taste.
  6. Serve hot and enjoy!
