Popo Supu (pumpkin And Coconut Soup)
Popo Supu is a traditional Tuvaluan soup made with pumpkin and coconut, creating a rich and creamy dish that is perfect for a comforting meal.
Ingredients
- 1 small pumpkin, peeled and diced
- 1 can (400ml) coconut milk
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until fragrant.
- Add the diced pumpkin and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes or until the pumpkin is tender.
- Stir in the coconut milk and simmer for an additional 5 minutes.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
