Porchetta (porchetta)
Porchetta is a traditional Italian pork roast that is seasoned with aromatic herbs and spices, then slow-roasted to perfection. This flavorful dish is a staple in Italian cuisine and is perfect for special occasions or gatherings.
Ingredients
- 5-6 lb pork belly, skin-on
- 4-5 cloves garlic, minced
- 1/4 cup fresh rosemary, chopped
- 1/4 cup fresh sage, chopped
- 1/4 cup fresh parsley, chopped
- 2 tbsp fennel seeds
- Salt and pepper to taste
Instructions
- Score the pork belly skin with a sharp knife.
- In a bowl, mix together the garlic, rosemary, sage, parsley, fennel seeds, salt, and pepper.
- Rub the herb mixture all over the pork belly, including inside the scored skin.
- Roll the pork belly and tie it with kitchen twine to secure the shape.
- Place the porchetta on a rack in a roasting pan and refrigerate uncovered for 12-24 hours to allow the flavors to meld.
- Preheat the oven to 300°F (150°C) and roast the porchetta for 4 hours, or until the internal temperature reaches 145°F (63°C).
- Let the porchetta rest for 20 minutes before slicing and serving.
