Ingredients

  • 5-6 lb pork belly, skin-on
  • 4-5 cloves garlic, minced
  • 1/4 cup fresh rosemary, chopped
  • 1/4 cup fresh sage, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fennel seeds
  • Salt and pepper to taste

Instructions

  1. Score the pork belly skin with a sharp knife.
  2. In a bowl, mix together the garlic, rosemary, sage, parsley, fennel seeds, salt, and pepper.
  3. Rub the herb mixture all over the pork belly, including inside the scored skin.
  4. Roll the pork belly and tie it with kitchen twine to secure the shape.
  5. Place the porchetta on a rack in a roasting pan and refrigerate uncovered for 12-24 hours to allow the flavors to meld.
  6. Preheat the oven to 300°F (150°C) and roast the porchetta for 4 hours, or until the internal temperature reaches 145°F (63°C).
  7. Let the porchetta rest for 20 minutes before slicing and serving.
