Pork and Potato Stew (Tocană de Porc cu Cartofi)
Tocană de Porc cu Cartofi is a traditional Romanian stew that combines tender pork with hearty potatoes in a flavorful and comforting dish.
Ingredients
- 1 kg pork shoulder, cubed
- 4 large potatoes, peeled and diced
- 2 onions, chopped
- 3 garlic cloves, minced
- 2 tablespoons vegetable oil
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 500ml chicken or vegetable broth
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onions and minced garlic, and sauté until the onions are translucent.
- Add the cubed pork shoulder to the pot and brown on all sides.
- Sprinkle the paprika and dried thyme over the pork, then season with salt and pepper.
- Add the diced potatoes and bay leaf to the pot, then pour in the chicken or vegetable broth.
- Bring the stew to a boil, then reduce the heat to low and simmer for 1.5 to 2 hours, or until the pork is tender and the potatoes are cooked through.
- Adjust the seasoning if needed, then serve the Tocană de Porc cu Cartofi hot, garnished with fresh herbs if desired.
