Pork and Potato Stew (Tocană de Porc cu Cartofi)

Ingredients

  • 1 kg pork shoulder, cubed
  • 4 large potatoes, peeled and diced
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 500ml chicken or vegetable broth

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onions and minced garlic, and sauté until the onions are translucent.
  3. Add the cubed pork shoulder to the pot and brown on all sides.
  4. Sprinkle the paprika and dried thyme over the pork, then season with salt and pepper.
  5. Add the diced potatoes and bay leaf to the pot, then pour in the chicken or vegetable broth.
  6. Bring the stew to a boil, then reduce the heat to low and simmer for 1.5 to 2 hours, or until the pork is tender and the potatoes are cooked through.
  7. Adjust the seasoning if needed, then serve the Tocană de Porc cu Cartofi hot, garnished with fresh herbs if desired.
