Pork And Squash
This pork and squash recipe is a delightful combination of savory and sweet flavors, perfect for a cozy dinner at home.
Ingredients
- 1 lb pork tenderloin, cut into 1-inch pieces
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups butternut squash, peeled and cubed
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Heat 1 tbsp of olive oil in a large skillet over medium heat.
- Add the pork pieces and cook until browned, about 5 minutes. Remove from the skillet and set aside.
- Heat the remaining 1 tbsp of olive oil in the same skillet.
- Add the diced onion and cook until softened, about 3 minutes.
- Stir in the minced garlic and cook for an additional 1 minute.
- Add the butternut squash, dried thyme, salt, and pepper. Cook for 10-12 minutes, or until the squash is tender.
- Return the cooked pork to the skillet and stir to combine. Cook for an additional 3-5 minutes until the pork is heated through.
- Serve hot and enjoy!
