Ingredients

  • 1 lb pork tenderloin, cut into 1-inch pieces
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups butternut squash, peeled and cubed
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat 1 tbsp of olive oil in a large skillet over medium heat.
  2. Add the pork pieces and cook until browned, about 5 minutes. Remove from the skillet and set aside.
  3. Heat the remaining 1 tbsp of olive oil in the same skillet.
  4. Add the diced onion and cook until softened, about 3 minutes.
  5. Stir in the minced garlic and cook for an additional 1 minute.
  6. Add the butternut squash, dried thyme, salt, and pepper. Cook for 10-12 minutes, or until the squash is tender.
  7. Return the cooked pork to the skillet and stir to combine. Cook for an additional 3-5 minutes until the pork is heated through.
  8. Serve hot and enjoy!
