Pork Curry (coorg Pandi Curry)

Ingredients

  • 1 kg pork, cut into cubes
  • 2 onions, finely chopped
  • 4 tomatoes, pureed
  • 1/4 cup vegetable oil
  • 1/2 cup grated coconut
  • 1 tablespoon ginger-garlic paste
  • 2 tablespoons Coorg curry powder
  • 1 teaspoon turmeric powder
  • 2 teaspoons red chili powder
  • Salt to taste
  • 2 cups water

Instructions

  1. Heat oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onions and sauté until they turn golden brown.
  3. Add the ginger-garlic paste and sauté for 2 minutes.
  4. Add the pork cubes and cook until they are browned on all sides.
  5. Stir in the Coorg curry powder, turmeric powder, red chili powder, and salt. Cook for 5 minutes.
  6. Pour in the tomato puree and cook for another 5 minutes.
  7. Add the grated coconut and water. Cover the pot and simmer for 45-50 minutes, or until the pork is tender.
  8. Adjust the seasoning and serve hot with steamed rice or traditional Coorg bread.
