Pork Curry (coorg Pandi Curry)
Pork Curry, also known as Coorg Pandi Curry, is a traditional dish from the Karnataka Cuisine. This spicy and flavorful curry is a popular dish in the Coorg region of Karnataka, India.
Ingredients
- 1 kg pork, cut into cubes
- 2 onions, finely chopped
- 4 tomatoes, pureed
- 1/4 cup vegetable oil
- 1/2 cup grated coconut
- 1 tablespoon ginger-garlic paste
- 2 tablespoons Coorg curry powder
- 1 teaspoon turmeric powder
- 2 teaspoons red chili powder
- Salt to taste
- 2 cups water
Instructions
- Heat oil in a large pot or Dutch oven over medium heat.
- Add the chopped onions and sauté until they turn golden brown.
- Add the ginger-garlic paste and sauté for 2 minutes.
- Add the pork cubes and cook until they are browned on all sides.
- Stir in the Coorg curry powder, turmeric powder, red chili powder, and salt. Cook for 5 minutes.
- Pour in the tomato puree and cook for another 5 minutes.
- Add the grated coconut and water. Cover the pot and simmer for 45-50 minutes, or until the pork is tender.
- Adjust the seasoning and serve hot with steamed rice or traditional Coorg bread.
