Pork Curry (faikakai Pua'a)
Pork Curry, known as Faikakai pua'a in Tongan cuisine, is a flavorful and aromatic dish that combines tender pork with a rich and fragrant curry sauce. This traditional Tongan recipe is perfect for a hearty and satisfying meal.
Ingredients
- 2 lbs pork shoulder, cut into cubes
- 2 tablespoons curry powder
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 can (14 oz) coconut milk
- 2 cups chicken broth
- 2 potatoes, peeled and diced
- 1 carrot, sliced
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat. Add the pork and cook until browned on all sides.
- Add the curry powder, onion, garlic, and ginger to the pot. Cook for a few minutes until the onions are soft and the spices are fragrant.
- Pour in the coconut milk and chicken broth. Bring to a simmer, then cover and cook for 30 minutes.
- Add the potatoes and carrots to the pot. Continue to simmer, covered, for an additional 20-30 minutes, or until the pork is tender and the vegetables are cooked through.
- Season with salt and pepper to taste. Serve the pork curry hot with steamed rice or crusty bread.
