Schweineschnitzel mit Pilzsoße, or Pork Schnitzel with Mushroom Gravy, is a classic German dish that is hearty, flavorful, and perfect for a comforting meal. The crispy pork schnitzel pairs perfectly with the rich and creamy mushroom gravy, making it a favorite among many.
Ingredients
- 4 pork loin chops, boneless
- 1 cup all-purpose flour
- 2 eggs
- 1 cup breadcrumbs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup vegetable oil
- 1 onion, finely chopped
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1/2 cup heavy cream
- 2 tablespoons butter
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat the oven to 200°F to keep the schnitzels warm while preparing the gravy.
- Place the pork chops between two sheets of plastic wrap and pound them with a meat mallet until they are about 1/4 inch thick.
- Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with salt and pepper.
- Dredge each pork chop in the flour, then dip into the beaten eggs, and coat with the breadcrumbs, pressing gently to adhere.
- Heat the vegetable oil in a large skillet over medium-high heat. Fry the pork chops for about 3-4 minutes on each side until golden brown and cooked through. Transfer to a baking sheet and keep warm in the oven.
- In the same skillet, add the butter and sauté the onions, mushrooms, and garlic until softened and golden brown.
- Pour in the chicken broth and let it simmer for a few minutes until slightly reduced. Stir in the heavy cream and simmer for another 5 minutes until the sauce thickens.
- Season the mushroom gravy with salt and pepper to taste, then stir in the chopped parsley.
- Serve the pork schnitzels with the mushroom gravy spooned over the top.
