Pork Schnitzel with Mushroom Gravy (Schweineschnitzel mit Pilzsoße)

Ingredients

  • 4 pork loin chops, boneless
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 cup breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup vegetable oil
  • 1 onion, finely chopped
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 200°F to keep the schnitzels warm while preparing the gravy.
  2. Place the pork chops between two sheets of plastic wrap and pound them with a meat mallet until they are about 1/4 inch thick.
  3. Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with salt and pepper.
  4. Dredge each pork chop in the flour, then dip into the beaten eggs, and coat with the breadcrumbs, pressing gently to adhere.
  5. Heat the vegetable oil in a large skillet over medium-high heat. Fry the pork chops for about 3-4 minutes on each side until golden brown and cooked through. Transfer to a baking sheet and keep warm in the oven.
  6. In the same skillet, add the butter and sauté the onions, mushrooms, and garlic until softened and golden brown.
  7. Pour in the chicken broth and let it simmer for a few minutes until slightly reduced. Stir in the heavy cream and simmer for another 5 minutes until the sauce thickens.
  8. Season the mushroom gravy with salt and pepper to taste, then stir in the chopped parsley.
  9. Serve the pork schnitzels with the mushroom gravy spooned over the top.
