Pork Sorpotel
Pork Sorpotel is a traditional dish from the Mangalurean Catholic Cuisine, known for its rich and spicy flavors. This dish is a perfect blend of pork, vinegar, and aromatic spices, making it a favorite at special occasions and festive gatherings.
Ingredients
- 1 kg pork, cut into small pieces
- 2 large onions, finely chopped
- 10-12 dry red chilies
- 1-inch ginger, chopped
- 8-10 garlic cloves
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 cup vinegar
- Salt to taste
Instructions
- Grind the dry red chilies, ginger, garlic, and cumin seeds to a fine paste.
- Heat oil in a pan and sauté the chopped onions until golden brown.
- Add the ground masala paste and cook for a few minutes.
- Add the pork pieces, turmeric powder, and salt. Mix well and cook for 5-7 minutes.
- Pour in the vinegar and bring the mixture to a boil. Then reduce the heat and simmer for 1.5-2 hours until the pork is tender and the gravy thickens.
- Adjust the seasoning and serve hot with steamed rice or bread.
