Pork Sorpotel Biryani is a delicious and aromatic dish from the Goan Catholic Cuisine. This fusion recipe combines the traditional Goan pork sorpotel with the flavors of biryani, resulting in a unique and flavorful meal.

Pork Sorpotel Biryani

Ingredients

  • 500g pork, cut into small pieces
  • 2 cups basmati rice
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch ginger, grated
  • 1/2 cup vinegar
  • 1/4 cup Goan masala paste
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 4 cups water
  • Salt to taste
  • 2 tbsp ghee
  • 2 bay leaves
  • 4-5 cloves
  • 2-inch cinnamon stick
  • 4-5 green cardamom pods
  • 1/4 cup chopped coriander leaves
  • Fried onions for garnish

Instructions

  1. In a large bowl, marinate the pork with vinegar, Goan masala paste, turmeric powder, and red chili powder. Let it marinate for 1 hour.
  2. Wash the basmati rice and soak it in water for 30 minutes.
  3. In a large pot, heat ghee and add the whole spices (bay leaves, cloves, cinnamon, and cardamom). Sauté for a minute.
  4. Add the chopped onion, garlic, and ginger. Sauté until the onions are golden brown.
  5. Add the marinated pork to the pot and cook until the pork is tender.
  6. Drain the soaked rice and add it to the pot. Stir well to combine with the pork and spices.
  7. Pour in the water and season with salt. Bring to a boil, then reduce the heat, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  8. Garnish with chopped coriander leaves and fried onions before serving.
