Pork Sorpotel Biryani
Pork Sorpotel Biryani is a delicious and aromatic dish from the Goan Catholic Cuisine. This fusion recipe combines the traditional Goan pork sorpotel with the flavors of biryani, resulting in a unique and flavorful meal.
Ingredients
- 500g pork, cut into small pieces
- 2 cups basmati rice
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 1-inch ginger, grated
- 1/2 cup vinegar
- 1/4 cup Goan masala paste
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 4 cups water
- Salt to taste
- 2 tbsp ghee
- 2 bay leaves
- 4-5 cloves
- 2-inch cinnamon stick
- 4-5 green cardamom pods
- 1/4 cup chopped coriander leaves
- Fried onions for garnish
Instructions
- In a large bowl, marinate the pork with vinegar, Goan masala paste, turmeric powder, and red chili powder. Let it marinate for 1 hour.
- Wash the basmati rice and soak it in water for 30 minutes.
- In a large pot, heat ghee and add the whole spices (bay leaves, cloves, cinnamon, and cardamom). Sauté for a minute.
- Add the chopped onion, garlic, and ginger. Sauté until the onions are golden brown.
- Add the marinated pork to the pot and cook until the pork is tender.
- Drain the soaked rice and add it to the pot. Stir well to combine with the pork and spices.
- Pour in the water and season with salt. Bring to a boil, then reduce the heat, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
- Garnish with chopped coriander leaves and fried onions before serving.
