Pork Tamarind Soup (sinigang Na Baboy)
Pork Tamarind Soup, also known as Sinigang na Baboy, is a classic Filipino dish known for its savory and sour flavor. This hearty soup is a staple in Kapampangan cuisine and is perfect for warming up on a chilly day.
Ingredients
- 2 lbs pork belly, cut into chunks
- 10 cups water
- 1 large onion, quartered
- 2 medium tomatoes, quartered
- 1 medium daikon radish, peeled and sliced
- 1 medium eggplant, sliced
- 2 cups string beans, cut into 2-inch pieces
- 2 cups tamarind broth (made from tamarind pulp and water)
- 3-4 pieces green chili peppers
- Salt and fish sauce to taste
Instructions
- In a large pot, bring the water to a boil and add the pork belly. Simmer for 30 minutes or until the pork is tender.
- Add the onion and tomatoes, and simmer for another 10 minutes.
- Stir in the tamarind broth and bring to a boil.
- Add the daikon radish and eggplant, and cook for 5 minutes.
- Finally, add the string beans and green chili peppers. Season with salt and fish sauce to taste.
- Serve hot and enjoy!
