Pork Tamarind Soup (sinigang Na Baboy)

Ingredients

  • 2 lbs pork belly, cut into chunks
  • 10 cups water
  • 1 large onion, quartered
  • 2 medium tomatoes, quartered
  • 1 medium daikon radish, peeled and sliced
  • 1 medium eggplant, sliced
  • 2 cups string beans, cut into 2-inch pieces
  • 2 cups tamarind broth (made from tamarind pulp and water)
  • 3-4 pieces green chili peppers
  • Salt and fish sauce to taste

Instructions

  1. In a large pot, bring the water to a boil and add the pork belly. Simmer for 30 minutes or until the pork is tender.
  2. Add the onion and tomatoes, and simmer for another 10 minutes.
  3. Stir in the tamarind broth and bring to a boil.
  4. Add the daikon radish and eggplant, and cook for 5 minutes.
  5. Finally, add the string beans and green chili peppers. Season with salt and fish sauce to taste.
  6. Serve hot and enjoy!
