Ingredients
- 500g pork belly, cut into cubes
- 10 black nuts (buah keluak)
- 4 tablespoons tamarind paste
- 4 red chilies, sliced
- 2 onions, finely chopped
- 4 cloves garlic, minced
- 3 tablespoons vegetable oil
- 1 tablespoon sugar
- Salt to taste
Instructions
- Soak the black nuts in water for 2 days, changing the water daily.
- Boil the black nuts for 1 hour, then remove the flesh from the shells and set aside.
- Heat the vegetable oil in a large pot and sauté the onions and garlic until fragrant.
- Add the pork belly and cook until browned.
- Add the black nut flesh, tamarind paste, red chilies, sugar, and salt. Stir well to combine.
- Add water to cover the ingredients and simmer for 1.5 hours, or until the pork is tender and the sauce has thickened.
- Serve the Pork with Black Nut hot with steamed rice.
