Pork With Black Nut (babi Buah Keluak)

Ingredients

  • 500g pork belly, cut into cubes
  • 10 black nuts (buah keluak)
  • 4 tablespoons tamarind paste
  • 4 red chilies, sliced
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 3 tablespoons vegetable oil
  • 1 tablespoon sugar
  • Salt to taste

Instructions

  1. Soak the black nuts in water for 2 days, changing the water daily.
  2. Boil the black nuts for 1 hour, then remove the flesh from the shells and set aside.
  3. Heat the vegetable oil in a large pot and sauté the onions and garlic until fragrant.
  4. Add the pork belly and cook until browned.
  5. Add the black nut flesh, tamarind paste, red chilies, sugar, and salt. Stir well to combine.
  6. Add water to cover the ingredients and simmer for 1.5 hours, or until the pork is tender and the sauce has thickened.
  7. Serve the Pork with Black Nut hot with steamed rice.
