Pork With Dry Bamboo Shoot

Ingredients

  • 500g pork, cut into cubes
  • 1 cup dry bamboo shoot, soaked and sliced
  • 1 onion, chopped
  • 3-4 cloves garlic, minced
  • 1-inch ginger, grated
  • 2-3 green chilies, slit
  • 1 tomato, chopped
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and sauté the onions, garlic, and ginger until fragrant.
  2. Add the pork and cook until it changes color.
  3. Stir in the turmeric powder, red chili powder, and salt.
  4. Add the sliced bamboo shoot and cook for 5 minutes.
  5. Pour in 2 cups of water, cover the pan, and simmer for 45 minutes or until the pork is tender.
  6. Add the chopped tomatoes and green chilies, and cook for another 5 minutes.
  7. Garnish with fresh coriander leaves before serving.
