Pork With Dry Bamboo Shoot

Ingredients
- 500g pork, cut into cubes
- 1 cup dry bamboo shoot, soaked and sliced
- 1 onion, chopped
- 3-4 cloves garlic, minced
- 1-inch ginger, grated
- 2-3 green chilies, slit
- 1 tomato, chopped
- 1 tsp turmeric powder
- 1 tsp red chili powder
- Salt to taste
- 2 tbsp oil
- Fresh coriander leaves for garnish
Instructions
- Heat oil in a pan and sauté the onions, garlic, and ginger until fragrant.
- Add the pork and cook until it changes color.
- Stir in the turmeric powder, red chili powder, and salt.
- Add the sliced bamboo shoot and cook for 5 minutes.
- Pour in 2 cups of water, cover the pan, and simmer for 45 minutes or until the pork is tender.
- Add the chopped tomatoes and green chilies, and cook for another 5 minutes.
- Garnish with fresh coriander leaves before serving.
