Porkkanalaatikko is a traditional Finnish dish that translates to "carrot box" in English. It is a sweet and savory carrot casserole that is often enjoyed during the holiday season or as a comforting family meal.
Ingredients
- 6 large carrots, grated
- 1 cup of rice
- 1 cup of milk
- 2 eggs
- 1/2 cup of brown sugar
- 1/4 cup of butter, melted
- 1/2 teaspoon of salt
- 1/2 teaspoon of cinnamon
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the rice according to package instructions and set aside to cool.
- In a large bowl, mix together the grated carrots, cooked rice, milk, eggs, brown sugar, melted butter, salt, and cinnamon.
- Pour the mixture into a greased casserole dish.
