Pororavioli (reindeer Ravioli)
Pororavioli, also known as Reindeer Ravioli, is a traditional dish from the Sami people of northern Scandinavia. This unique and flavorful ravioli is a perfect representation of the indigenous Sami cuisine.
Ingredients
- 200g reindeer meat, minced
- 1 onion, finely chopped
- 1 garlic clove, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 200g all-purpose flour
- 2 eggs
- 1 tablespoon water
- Butter, for cooking
- Fresh thyme, for garnish
Instructions
- In a bowl, mix the minced reindeer meat, chopped onion, minced garlic, salt, black pepper, and nutmeg.
- On a clean surface, make a well with the flour and crack the eggs into it. Gradually mix the flour into the eggs to form a dough. Knead the dough until smooth, then let it rest for 30 minutes.
- Roll out the dough into thin sheets and cut into small squares.
- Place a small amount of the reindeer filling onto each square, then fold and seal the edges to form ravioli.
- Cook the ravioli in boiling water for 3-4 minutes, then drain.
- In a pan, melt butter and sauté the cooked ravioli until lightly browned.
- Serve the pororavioli hot, garnished with fresh thyme.
