Port Isaac Lobster Risotto

Ingredients

  • 1 1/2 lbs fresh lobster, cooked and meat removed
  • 6 cups seafood or chicken broth
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 cups Arborio rice
  • 1/2 cup dry white wine
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp unsalted butter
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large pot, bring the seafood or chicken broth to a simmer.
  2. Heat the olive oil in a separate large, deep skillet over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic to the skillet and cook for an additional 1-2 minutes.
  4. Stir in the Arborio rice and cook for 2-3 minutes, until the rice is well coated with the oil and starts to turn translucent around the edges.
  5. Pour in the white wine and cook, stirring constantly, until the wine is absorbed by the rice.
  6. Begin adding the warm broth to the rice, one ladleful at a time, stirring constantly and allowing each addition to be absorbed before adding the next. Continue this process until the rice is creamy and al dente, about 18-20 minutes.
  7. Gently fold in the cooked lobster meat, Parmesan cheese, and butter. Season with salt and pepper to taste.
  8. Divide the lobster risotto among serving plates, garnish with chopped parsley, and serve hot.
