Port Isaac Lobster Risotto

Ingredients
- 1 1/2 lbs fresh lobster, cooked and meat removed
- 6 cups seafood or chicken broth
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 cups Arborio rice
- 1/2 cup dry white wine
- 1/2 cup grated Parmesan cheese
- 2 tbsp unsalted butter
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- In a large pot, bring the seafood or chicken broth to a simmer.
- Heat the olive oil in a separate large, deep skillet over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Add the minced garlic to the skillet and cook for an additional 1-2 minutes.
- Stir in the Arborio rice and cook for 2-3 minutes, until the rice is well coated with the oil and starts to turn translucent around the edges.
- Pour in the white wine and cook, stirring constantly, until the wine is absorbed by the rice.
- Begin adding the warm broth to the rice, one ladleful at a time, stirring constantly and allowing each addition to be absorbed before adding the next. Continue this process until the rice is creamy and al dente, about 18-20 minutes.
- Gently fold in the cooked lobster meat, Parmesan cheese, and butter. Season with salt and pepper to taste.
- Divide the lobster risotto among serving plates, garnish with chopped parsley, and serve hot.
