Portokalopita is a traditional Greek dessert hailing from the Ionian Islands. This delicious cake is made with the vibrant flavors of lemon and olive oil, creating a delightful treat that is perfect for any occasion.
Ingredients
- 4 eggs
- 1 cup sugar
- 1 cup olive oil
- 1 cup Greek yogurt
- 1/4 cup fresh lemon juice
- Zest of 2 lemons
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup ground almonds
- 1/2 cup breadcrumbs
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 cup honey
- 1/4 cup water
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
- In a large bowl, beat the eggs and sugar until light and fluffy.
- Gradually add the olive oil, Greek yogurt, lemon juice, and lemon zest, mixing well after each addition.
- In a separate bowl, sift together the flour, baking powder, baking soda, and salt.
- Slowly add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the ground almonds, breadcrumbs, cinnamon, and cloves.
- Pour the batter into the prepared baking dish and smooth the top with a spatula.
- Bake for 35-40 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the syrup by combining the honey and water in a small saucepan. Bring to a simmer and cook for 5 minutes.
- Once the cake is done, remove it from the oven and immediately pour the hot syrup over the hot cake.
- Allow the cake to cool in the baking dish before cutting into squares and serving.
