Ingredients

  • 4 eggs
  • 1 cup sugar
  • 1 cup olive oil
  • 1 cup Greek yogurt
  • 1/4 cup fresh lemon juice
  • Zest of 2 lemons
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup ground almonds
  • 1/2 cup breadcrumbs
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 cup honey
  • 1/4 cup water

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. In a large bowl, beat the eggs and sugar until light and fluffy.
  3. Gradually add the olive oil, Greek yogurt, lemon juice, and lemon zest, mixing well after each addition.
  4. In a separate bowl, sift together the flour, baking powder, baking soda, and salt.
  5. Slowly add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the ground almonds, breadcrumbs, cinnamon, and cloves.
  7. Pour the batter into the prepared baking dish and smooth the top with a spatula.
  8. Bake for 35-40 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  9. While the cake is baking, prepare the syrup by combining the honey and water in a small saucepan. Bring to a simmer and cook for 5 minutes.
  10. Once the cake is done, remove it from the oven and immediately pour the hot syrup over the hot cake.
  11. Allow the cake to cool in the baking dish before cutting into squares and serving.
