Ingredients

  • 4 large eggs
  • 1 cup sugar
  • 1 cup Greek yogurt
  • 1/2 cup olive oil
  • 1 cup almond flour
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Zest of 2 oranges
  • 1/2 cup freshly squeezed orange juice
  • 1/2 cup sliced almonds
  • 1/2 cup honey

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a large bowl, beat the eggs and sugar until light and fluffy.
  3. Stir in the Greek yogurt and olive oil until well combined.
  4. Gradually add the almond flour, all-purpose flour, baking powder, and baking soda, mixing until smooth.
  5. Fold in the orange zest, orange juice, and half of the sliced almonds.
  6. Pour the batter into the prepared baking dish and sprinkle the remaining almonds on top.
  7. Bake for 40-45 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean.
  8. While the cake is still warm, drizzle the honey over the top.
  9. Allow the cake to cool before slicing and serving.
