Ingredients

  • 500g salted cod, soaked and flaked
  • 500g potatoes, thinly sliced
  • 1 onion, thinly sliced
  • 4 eggs
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Flat-leaf parsley, chopped (for garnish)

Instructions

  1. Boil the potatoes until they are just tender, then drain and set aside.
  2. In a large skillet, sauté the onion and garlic in olive oil until softened.
  3. Add the flaked cod to the skillet and cook for a few minutes, stirring gently.
  4. Add the boiled potatoes to the skillet and mix everything together.
  5. In a separate bowl, beat the eggs and season with salt and pepper.
  6. Pour the beaten eggs over the cod and potato mixture in the skillet.
  7. Cook over low heat, stirring gently, until the eggs are just set.
  8. Sprinkle with chopped parsley and serve hot.
