Ingredients
- 500g salted cod, soaked and flaked
- 500g potatoes, thinly sliced
- 1 onion, thinly sliced
- 4 eggs

- Flat-leaf parsley, chopped (for garnish)
Instructions
- Boil the potatoes until they are just tender, then drain and set aside.
- In a large skillet, sauté the onion and garlic in olive oil until softened.
- Add the flaked cod to the skillet and cook for a few minutes, stirring gently.
- Add the boiled potatoes to the skillet and mix everything together.
- In a separate bowl, beat the eggs and season with salt and pepper.
- Pour the beaten eggs over the cod and potato mixture in the skillet.
- Cook over low heat, stirring gently, until the eggs are just set.
- Sprinkle with chopped parsley and serve hot.
