Portuguese Stew (cozido À Portuguesa)

Ingredients

  • 1 lb beef chuck, cut into chunks
  • 1 lb pork ribs
  • 1 lb Portuguese smoked sausage (linguiça)
  • 1 lb potatoes, peeled and quartered
  • 2 carrots, peeled and cut into chunks
  • 1 cabbage, cut into wedges
  • 1 chorizo sausage
  • 1 onion, peeled and halved
  • 4 cloves garlic, peeled
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, place the beef chuck, pork ribs, Portuguese smoked sausage, chorizo sausage, onion, garlic, and bay leaf.
  2. Add enough water to cover the meats and bring to a boil. Skim off any foam that rises to the surface.
  3. Reduce the heat to a simmer and cook for 1 hour.
  4. Add the potatoes, carrots, and cabbage to the pot and continue to simmer for another 45 minutes, or until the vegetables are tender.
  5. Season with salt and pepper to taste.
  6. Remove the meats and vegetables from the pot and arrange on a serving platter. Serve the broth on the side as a soup.
