Portuguese Stew, also known as Cozido à Portuguesa, is a traditional dish from Portugal that is hearty, flavorful, and perfect for a comforting meal. This stew is a combination of various meats, sausages, and vegetables, creating a rich and satisfying one-pot meal.
Ingredients
- 1 lb beef chuck, cut into chunks
- 1 lb pork ribs
- 1 lb Portuguese smoked sausage (linguiça)
- 1 lb potatoes, peeled and quartered
- 2 carrots, peeled and cut into chunks
- 1 cabbage, cut into wedges
- 1 chorizo sausage
- 1 onion, peeled and halved
- 4 cloves garlic, peeled
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, place the beef chuck, pork ribs, Portuguese smoked sausage, chorizo sausage, onion, garlic, and bay leaf.
- Add enough water to cover the meats and bring to a boil. Skim off any foam that rises to the surface.
- Reduce the heat to a simmer and cook for 1 hour.
- Add the potatoes, carrots, and cabbage to the pot and continue to simmer for another 45 minutes, or until the vegetables are tender.
- Season with salt and pepper to taste.
- Remove the meats and vegetables from the pot and arrange on a serving platter. Serve the broth on the side as a soup.
