Ingredients

  • 500g salted cod, soaked and flaked
  • 400g canned chickpeas, drained and rinsed
  • 2 onions, sliced
  • 4 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 bay leaf
  • 1/2 cup olive oil
  • 1/2 cup chopped parsley
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
  2. Add the tomatoes, bay leaf, and flaked salted cod to the pot. Cook for 10 minutes, stirring occasionally.
  3. Add the chickpeas and enough water to cover the ingredients. Simmer for 20 minutes, or until the cod is tender.
  4. Season with salt and pepper to taste, then stir in the chopped parsley.
  5. Serve the Bacalhau com Grão hot, accompanied by crusty bread or rice.
