Bacalhau com Grão is a traditional Macanese dish that features salted cod and chickpeas, creating a flavorful and hearty meal.
Ingredients
- 500g salted cod, soaked and flaked
- 400g canned chickpeas, drained and rinsed
- 2 onions, sliced
- 4 cloves garlic, minced
- 2 tomatoes, diced
- 1 bay leaf
- 1/2 cup olive oil
- 1/2 cup chopped parsley
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the tomatoes, bay leaf, and flaked salted cod to the pot. Cook for 10 minutes, stirring occasionally.
- Add the chickpeas and enough water to cover the ingredients. Simmer for 20 minutes, or until the cod is tender.
- Season with salt and pepper to taste, then stir in the chopped parsley.
- Serve the Bacalhau com Grão hot, accompanied by crusty bread or rice.
