Pot Au Feu
Pot au feu is a traditional French beef stew that is hearty, comforting, and perfect for a cozy meal at home.
Ingredients
- 2 lbs beef chuck, cut into large chunks
- 4 carrots, peeled and cut into large pieces
- 4 leeks, white and light green parts only, cleaned and cut into large pieces
- 4 celery stalks, cut into large pieces
- 1 onion, peeled and halved
- 1 bouquet garni (thyme, parsley, bay leaves)
- 6 whole cloves
- Salt and pepper to taste
Instructions
- Place the beef chunks in a large pot and cover with cold water.
- Bring to a boil and skim off any foam that rises to the surface.
- Add the carrots, leeks, celery, onion, bouquet garni, and cloves to the pot.
- Season with salt and pepper.
- Simmer, partially covered, for 3 hours or until the beef is tender.
- Remove the beef and vegetables from the pot and transfer to a serving dish.
- Strain the broth and serve it in bowls alongside the beef and vegetables.
