Ingredients

  • 2 lbs beef chuck, cut into large chunks
  • 4 carrots, peeled and cut into large pieces
  • 4 leeks, white and light green parts only, cleaned and cut into large pieces
  • 4 celery stalks, cut into large pieces
  • 1 onion, peeled and halved
  • 1 bouquet garni (thyme, parsley, bay leaves)
  • 6 whole cloves
  • Salt and pepper to taste

Instructions

  1. Place the beef chunks in a large pot and cover with cold water.
  2. Bring to a boil and skim off any foam that rises to the surface.
  3. Add the carrots, leeks, celery, onion, bouquet garni, and cloves to the pot.
  4. Season with salt and pepper.
  5. Simmer, partially covered, for 3 hours or until the beef is tender.
  6. Remove the beef and vegetables from the pot and transfer to a serving dish.
  7. Strain the broth and serve it in bowls alongside the beef and vegetables.
