Potato and Bacon Casserole (Kartupeļu un speķa kaserole)

Ingredients

  • 6 large potatoes, peeled and thinly sliced
  • 1 onion, thinly sliced
  • 200g bacon, diced
  • 200g cheddar cheese, grated
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a greased casserole dish, layer half of the sliced potatoes, onions, and bacon. Sprinkle with half of the grated cheese and season with salt and pepper.
  3. Repeat the layers with the remaining potatoes, onions, bacon, and cheese.
  4. Pour the heavy cream over the top of the casserole.
  5. Cover the dish with foil and bake for 45 minutes.
  6. Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the top is golden brown.
  7. Let the casserole rest for 5 minutes before serving.
