Potato and Bacon Casserole (Kartupeļu un speķa kaserole)
Kartupeļu un speķa kaserole, or Potato and Bacon Casserole, is a classic Latvian comfort food dish that is perfect for a cozy family dinner or a gathering with friends. This hearty casserole is filled with layers of tender potatoes, savory bacon, and creamy cheese, creating a delicious and satisfying meal.
Ingredients
- 6 large potatoes, peeled and thinly sliced
- 1 onion, thinly sliced
- 200g bacon, diced
- 200g cheddar cheese, grated
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a greased casserole dish, layer half of the sliced potatoes, onions, and bacon. Sprinkle with half of the grated cheese and season with salt and pepper.
- Repeat the layers with the remaining potatoes, onions, bacon, and cheese.
- Pour the heavy cream over the top of the casserole.
- Cover the dish with foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the top is golden brown.
- Let the casserole rest for 5 minutes before serving.
