Ingredients

  • 2 large potatoes, peeled and cubed
  • 1 small cauliflower, cut into florets
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onion and sauté until golden brown.
  2. Add the ginger and garlic paste, and cook for a minute.
  3. Add the chopped tomatoes and cook until they turn soft and the oil separates.
  4. Add the turmeric, red chili, coriander powder, and garam masala. Cook for a few minutes.
  5. Add the cubed potatoes and cauliflower florets. Mix well to coat the vegetables with the spices.
  6. Add salt to taste and a little water. Cover and cook until the vegetables are tender.
  7. Garnish with fresh coriander leaves and serve hot with roti or rice.
