Ingredients
- 2 large potatoes, peeled and cubed
- 1 small cauliflower, cut into florets
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onion and sauté until golden brown.
- Add the ginger and garlic paste, and cook for a minute.
- Add the chopped tomatoes and cook until they turn soft and the oil separates.
- Add the turmeric, red chili, coriander powder, and garam masala. Cook for a few minutes.
- Add the cubed potatoes and cauliflower florets. Mix well to coat the vegetables with the spices.
- Add salt to taste and a little water. Cover and cook until the vegetables are tender.
- Garnish with fresh coriander leaves and serve hot with roti or rice.
