Potato And Guinness Soup
This hearty Potato and Guinness Soup is a classic dish from Northern Irish cuisine, perfect for warming up on a chilly day.
Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup Guinness beer
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the diced potatoes, vegetable broth, and Guinness beer to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the potatoes are tender.
- Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth, then return to the pot.
- Stir in the heavy cream and season with salt and pepper to taste. Simmer for an additional 10 minutes.
