Potato and Mushroom Casserole (Kartupeļu un sēņu kaserole)

Ingredients

  • 6 large potatoes, peeled and thinly sliced
  • 1 onion, finely chopped
  • 250g mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup grated cheese
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, melt the butter over medium heat. Add the onions and garlic, and sauté until softened.
  3. Add the mushrooms to the skillet and cook until they release their liquid and become golden brown. Season with salt and pepper.
  4. Grease a casserole dish and layer half of the sliced potatoes on the bottom.
  5. Spread the mushroom mixture over the potatoes, then layer the remaining potatoes on top.
  6. In a separate bowl, mix the vegetable broth and heavy cream. Pour this mixture over the potatoes and mushrooms.
  7. Sprinkle the grated cheese over the top of the casserole.
  8. Cover the casserole dish with foil and bake for 45 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the cheese is golden and bubbly.
  9. Let the casserole cool for a few minutes before serving.
