Potato and Onion Stuffed Flatbread, also known as Rajasthani Aloo Pyaaz Paratha, is a popular dish from the Rajasthani cuisine. This flavorful and hearty flatbread is perfect for a satisfying breakfast or a filling lunch.
Ingredients
- 2 cups whole wheat flour
- 4 medium potatoes, boiled and mashed
- 1 large onion, finely chopped
- 1 green chili, finely chopped
- 1 teaspoon cumin seeds
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt to taste
- 2 tablespoons ghee (clarified butter) or oil
- Water as needed
Instructions
- In a large mixing bowl, combine the whole wheat flour and a pinch of salt. Gradually add water and knead into a smooth dough. Cover and let it rest for 15 minutes.
- In a separate bowl, mix together the mashed potatoes, chopped onion, green chili, cumin seeds, red chili powder, garam masala, and salt.
- Divide the dough into equal-sized balls. Roll out each ball into a small circle and place a portion of the potato filling in the center. Bring the edges together and seal the filling inside the dough.
- Flatten the filled dough ball and roll it out into a paratha, dusting with flour as needed to prevent sticking.
- Heat a griddle or a non-stick pan over medium heat. Place the rolled paratha on the griddle and cook until golden brown spots appear on both sides, brushing with ghee or oil.
- Repeat the process with the remaining dough and filling to make more parathas.
- Serve the hot and delicious Potato and Onion Stuffed Flatbread with yogurt, pickle, or chutney.
