Ingredients

  • 4 large yellow potatoes, boiled and mashed
  • 1/4 cup lime juice
  • 1/4 cup vegetable oil
  • 1 teaspoon aji amarillo paste
  • Salt and pepper to taste
  • 2 avocados, sliced
  • 1 cup shredded chicken or canned tuna
  • 1/2 cup mayonnaise
  • 4 hard-boiled eggs, sliced
  • 1/4 cup black olives, sliced

Instructions

  1. In a bowl, mix the mashed potatoes with lime juice, vegetable oil, aji amarillo paste, salt, and pepper.
  2. Divide the potato mixture into two equal parts.
  3. Line the bottom of a casserole dish with one part of the potato mixture.
  4. Layer the sliced avocados on top of the potato mixture.
  5. Spread the shredded chicken or tuna over the avocados.
  6. Combine the mayonnaise with the remaining potato mixture and spread it over the chicken or tuna layer.
  7. Garnish with sliced hard-boiled eggs and black olives.
  8. Refrigerate for at least 1 hour before serving.
