Potato Curry (bhojpuri Aloo Dum)

Ingredients

  • 4 medium potatoes, peeled and cubed
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 1 tsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
  2. Add the ginger-garlic paste and sauté for a minute. Then, add the tomato puree and cook until the oil separates.
  3. Stir in the turmeric, red chili powder, coriander powder, garam masala, and salt. Cook for a few minutes.
  4. Add the cubed potatoes and mix well to coat them with the spices. Pour in 1 cup of water, cover the pan, and let it simmer until the potatoes are tender.
  5. Garnish with fresh cilantro and serve hot with rice or flatbread.
