Potato Curry, also known as Bhojpuri Aloo Dum, is a flavorful and aromatic dish from the Bhojpuri Cuisine. This vegetarian curry is made with potatoes and a blend of traditional Indian spices, creating a rich and satisfying dish that pairs perfectly with rice or flatbread.
Ingredients
- 4 medium potatoes, peeled and cubed
- 2 tbsp oil
- 1 tsp cumin seeds
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 1 tsp ginger-garlic paste
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1 tsp garam masala
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add the ginger-garlic paste and sauté for a minute. Then, add the tomato puree and cook until the oil separates.
- Stir in the turmeric, red chili powder, coriander powder, garam masala, and salt. Cook for a few minutes.
- Add the cubed potatoes and mix well to coat them with the spices. Pour in 1 cup of water, cover the pan, and let it simmer until the potatoes are tender.
- Garnish with fresh cilantro and serve hot with rice or flatbread.
