Potato Dumplings (ukrainian Varenyky)

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup warm water
  • 4 large potatoes, peeled and diced
  • 1 onion, finely chopped
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix the flour and salt. Gradually add the warm water and knead the dough until smooth. Cover and let it rest for 10 minutes.
  2. In a pot, boil the potatoes until tender. Drain and mash them. In a skillet, sauté the onion in butter until golden. Mix the onions with the mashed potatoes and season with salt and pepper.
  3. Roll out the dough on a floured surface and cut it into circles. Place a spoonful of the potato mixture in the center of each circle. Fold the dough over the filling and seal the edges.
  4. Boil the dumplings in salted water for about 5-7 minutes, or until they float to the surface. Remove with a slotted spoon and serve hot.
