Potato Dumplings (ukrainian Varenyky)
Potato Dumplings, also known as Ukrainian Varenyky, are a traditional dish in Caucasian cuisine. These dumplings are filled with a savory potato mixture and are a popular comfort food in many Eastern European countries.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup warm water
- 4 large potatoes, peeled and diced
- 1 onion, finely chopped
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large bowl, mix the flour and salt. Gradually add the warm water and knead the dough until smooth. Cover and let it rest for 10 minutes.
- In a pot, boil the potatoes until tender. Drain and mash them. In a skillet, sauté the onion in butter until golden. Mix the onions with the mashed potatoes and season with salt and pepper.
- Roll out the dough on a floured surface and cut it into circles. Place a spoonful of the potato mixture in the center of each circle. Fold the dough over the filling and seal the edges.
- Boil the dumplings in salted water for about 5-7 minutes, or until they float to the surface. Remove with a slotted spoon and serve hot.
