Potato Dumplings with Bryndza Cheese (Bryndzové halušky)

Ingredients

  • 4 large potatoes, peeled and grated
  • 2 cups all-purpose flour
  • 1 egg
  • 1/2 teaspoon salt
  • 1/2 lb bryndza cheese, crumbled
  • 4 slices of bacon, diced

Instructions

  1. Place the grated potatoes in a clean kitchen towel and squeeze out the excess moisture.
  2. In a large bowl, combine the grated potatoes, flour, egg, and salt. Mix until a dough forms.
  3. Divide the dough into small portions and shape them into dumplings.
  4. Bring a large pot of salted water to a boil. Drop the dumplings into the boiling water and cook until they float to the surface, about 3-4 minutes.
  5. While the dumplings are cooking, fry the diced bacon in a skillet until crispy.
  6. Drain the cooked dumplings and place them in a serving dish. Top with crumbled bryndza cheese and crispy bacon.
