Ingredients

  • 4 medium potatoes, peeled and cubed
  • 2 small eggplants, diced
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 green chili, finely chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 2 tablespoons oil
  • Fresh cilantro leaves for garnish

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add onions and sauté until golden brown.
  2. Add garlic, ginger, and green chili. Sauté for a minute.
  3. Add tomatoes, turmeric powder, coriander powder, red chili powder, and salt. Cook until the tomatoes are soft and oil separates.
  4. Add potatoes and eggplants. Mix well to coat the vegetables with the spices.
  5. Cover and cook on medium heat until the potatoes and eggplants are tender, stirring occasionally.
  6. Sprinkle garam masala and garnish with fresh cilantro leaves.
  7. Serve hot with rice or flatbread.
