Ingredients

  • 4 medium potatoes, peeled and cubed
  • 2 cups fresh fenugreek leaves, washed and chopped
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, slit
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • 1 teaspoon ginger-garlic paste
  • 1 cup water

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  2. Add ginger-garlic paste and sauté for a minute. Then, add chopped tomatoes and cook until they turn mushy.
  3. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 2-3 minutes.
  4. Add cubed potatoes and chopped fenugreek leaves. Mix everything together and cook for 5 minutes.
  5. Pour in the water, cover the pan, and let the curry simmer for 10-12 minutes or until the potatoes are cooked through.
  6. Sprinkle garam masala, mix gently, and cook for another 2 minutes. Garnish with cilantro if desired.
  7. Serve the Potato Fenugreek Curry hot with rice or roti.
