Ingredients
- 6 large potatoes, grated
- 1 onion, finely chopped
- 2 eggs

Instructions
- In a large bowl, mix the grated potatoes, chopped onion, eggs, flour, salt, and pepper.
- Heat a non-stick skillet over medium heat and add a spoonful of the potato mixture to form a pancake. Cook until golden brown on both sides. Repeat with the remaining mixture to make 8-10 pancakes.
- If using meat, cook it in a separate pan until browned. If using mushrooms, sauté them until tender.
- To assemble the tower, place a potato pancake on a serving plate, top with a layer of filling, then another pancake, and continue until all the pancakes and filling are used.
- Serve the potato pancake tower with a dollop of sour cream on top.
