Ingredients
- 6 large potatoes, peeled and grated
- 1 onion, finely chopped
- 200g bacon, diced
- 4 eggs
- 1 cup milk
- 1/2 cup sour cream
- 1/4 cup melted butter
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together the grated potatoes, chopped onion, and diced bacon.
- In a separate bowl, whisk the eggs, milk, sour cream, and melted butter. Season with salt and pepper.
- Pour the egg mixture over the potato mixture and stir until well combined.
- Transfer the mixture to a greased baking dish and smooth the top.
- Bake in the preheated oven for 1 hour, or until the top is golden brown and the pudding is set.
