Potato Salad (gromperenzalot)
Potato Salad, known as Gromperenzalot in Luxembourg, is a traditional dish that is perfect for picnics, barbecues, or as a side dish for any meal. This recipe combines tender potatoes with a tangy dressing for a refreshing and satisfying salad.
Ingredients
- 2 lbs (900g) potatoes, peeled and diced
- 1/2 cup (120ml) mayonnaise
- 2 tablespoons (30ml) white wine vinegar
- 1 small red onion, finely chopped
- 3 hard-boiled eggs, chopped
- 2 tablespoons (30ml) chopped fresh parsley
- Salt and pepper to taste
Instructions
- Place the diced potatoes in a pot and cover with water. Bring to a boil and cook for 10-12 minutes until the potatoes are tender. Drain and let cool.
- In a large bowl, mix the mayonnaise and white wine vinegar to make the dressing.
- Add the cooled potatoes, chopped red onion, chopped hard-boiled eggs, and chopped parsley to the bowl with the dressing. Gently toss to coat everything evenly.
- Season with salt and pepper to taste.
- Refrigerate for at least 1 hour before serving to allow the flavors to meld together.
