Potato Salad (gromperenzalot)

Ingredients

  • 2 lbs (900g) potatoes, peeled and diced
  • 1/2 cup (120ml) mayonnaise
  • 2 tablespoons (30ml) white wine vinegar
  • 1 small red onion, finely chopped
  • 3 hard-boiled eggs, chopped
  • 2 tablespoons (30ml) chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Place the diced potatoes in a pot and cover with water. Bring to a boil and cook for 10-12 minutes until the potatoes are tender. Drain and let cool.
  2. In a large bowl, mix the mayonnaise and white wine vinegar to make the dressing.
  3. Add the cooled potatoes, chopped red onion, chopped hard-boiled eggs, and chopped parsley to the bowl with the dressing. Gently toss to coat everything evenly.
  4. Season with salt and pepper to taste.
  5. Refrigerate for at least 1 hour before serving to allow the flavors to meld together.
