Potato Soup (ciorbă De Cartofi)
Potato Soup, also known as Ciorbă de cartofi, is a traditional Moldovan dish that is hearty, comforting, and perfect for a cold day. This soup is easy to make and packed with flavors that will warm you up from the inside out.
Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 1 cup sour cream
- 2 tablespoons flour
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the onions, carrots, and celery, and cook until the vegetables are soft.
- Sprinkle the flour over the vegetables and stir to coat.
- Add the potatoes and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer until the potatoes are tender.
- In a small bowl, mix the sour cream with a ladle of hot soup from the pot. Pour the sour cream mixture back into the pot and stir well.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
