Potato Soup (ciorbă De Cartofi)

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 1 cup sour cream
  • 2 tablespoons flour
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onions, carrots, and celery, and cook until the vegetables are soft.
  2. Sprinkle the flour over the vegetables and stir to coat.
  3. Add the potatoes and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer until the potatoes are tender.
  4. In a small bowl, mix the sour cream with a ladle of hot soup from the pot. Pour the sour cream mixture back into the pot and stir well.
  5. Season with salt and pepper to taste.
  6. Serve hot and enjoy!
