Potato Soup (gromperenzopp)
Potato soup, known as Gromperenzopp in Luxembourg, is a hearty and comforting dish perfect for cold weather. This traditional Luxembourgian soup is easy to make and full of flavor.
Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped chives for garnish
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the potatoes are tender.
- Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
- Stir in the heavy cream and season with salt and pepper to taste.
- Simmer for an additional 5 minutes to heat through.
- Serve the potato soup hot, garnished with chopped chives.
