Ingredients
- 3 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup vegetable oil
- 1 cup water
- 2 large potatoes, boiled and mashed
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp curry powder
- 1/2 tsp ground cumin
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- Salt to taste
- Oil for frying
Instructions
- In a large bowl, combine the flour, baking powder, and salt. Gradually add the vegetable oil and water, kneading the dough until smooth. Cover and let it rest for 15 minutes.
- In a separate bowl, mix the mashed potatoes, chopped onion, minced garlic, curry powder, cumin, turmeric, cayenne pepper, and salt until well combined.
- Divide the dough into 8 equal portions. Roll each portion into a ball, then flatten it into a circle about 1/4 inch thick.
- Place a spoonful of the potato filling in the center of each dough circle. Fold the dough over the filling and pinch the edges to seal, forming a stuffed bread.
- Heat oil in a large skillet over medium heat. Fry the stuffed bread until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.
- Repeat with the remaining stuffed bread, adding more oil to the skillet as needed.
- Serve the potato stuffed bread hot and enjoy!
