Potato Stuffed Flatbread (aloo Paratha)

Ingredients

  • 2 cups whole wheat flour
  • 1 cup water
  • 4 medium potatoes, boiled and mashed
  • 1 small onion, finely chopped
  • 2 green chilies, finely chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 2 tablespoons chopped fresh coriander leaves
  • Ghee or oil for cooking

Instructions

  1. In a large bowl, combine the whole wheat flour and water to make a soft dough. Cover and let it rest for 15 minutes.
  2. In a separate bowl, mix the mashed potatoes, chopped onion, green chilies, cumin seeds, garam masala, red chili powder, turmeric powder, salt, and fresh coriander leaves to make the filling.
  3. Divide the dough into equal-sized balls and roll each ball into a small circle. Place a portion of the potato filling in the center and seal the edges to form a stuffed ball.
  4. Flatten the stuffed ball and roll it out into a circle, dusting with flour as needed.
  5. Heat a griddle or non-stick pan over medium heat and cook the rolled out flatbread, brushing with ghee or oil until golden brown spots appear on both sides.
  6. Repeat with the remaining dough and filling to make the rest of the parathas.
  7. Serve hot with yogurt, pickles, or chutney.
