Ingredients
- 2 cups whole wheat flour
- 1 cup water
- 1 teaspoon salt
- 2 large potatoes, boiled and mashed
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 1 teaspoon chili powder
- 1/2 teaspoon turmeric
- 2 tablespoons chopped cilantro
- Ghee or oil for cooking
Instructions
- In a large bowl, mix the whole wheat flour, water, and salt to form a smooth dough. Cover and let it rest for 15 minutes.
- In another bowl, combine the mashed potatoes, cumin seeds, garam masala, chili powder, turmeric, and chopped cilantro to make the stuffing.
- Divide the dough into equal-sized balls and roll each ball into a small circle.
- Place a spoonful of the potato stuffing in the center of each circle, then bring the edges of the dough together to enclose the filling. Roll it out again into a flatbread.
- Heat a pan over medium heat and cook the flatbread with ghee or oil until both sides are golden and crispy.
- Repeat with the remaining dough and stuffing.
- Serve the crispy aloo parathas hot with yogurt, pickles, or chutney.
