Potato Stuffed Flatbread (punjabi Aloo Paratha)

Ingredients

  • 2 cups whole wheat flour
  • Water, as needed
  • 4 medium potatoes, boiled and mashed
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 1 teaspoon ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • Salt, to taste
  • 2 tablespoons fresh coriander, chopped
  • Ghee or oil, for cooking

Instructions

  1. In a large mixing bowl, combine the whole wheat flour and water to make a soft dough. Cover and let it rest for 15 minutes.
  2. In a separate bowl, mix together the mashed potatoes, chopped onion, green chilies, grated ginger, cumin seeds, garam masala, turmeric powder, salt, and fresh coriander to make the stuffing.
  3. Divide the dough into equal-sized balls and roll each ball into a small circle. Place a portion of the potato stuffing in the center and seal the edges to form a stuffed ball.
  4. Flatten the stuffed ball and roll it out into a paratha, dusting with flour as needed to prevent sticking.
  5. Heat a griddle or skillet over medium heat and cook the paratha on both sides, applying ghee or oil until golden brown spots appear.
  6. Repeat the process for the remaining dough and stuffing to make more parathas.
  7. Serve hot with yogurt, pickle, or chutney.
