Ingredients

  • 4 large potatoes, boiled and peeled

  • 4 saltine crackers
  • 2 tablespoons vegetable oil
  • 1/2 onion, chopped
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • Lettuce leaves for serving
  • 4 hard-boiled eggs, halved, for garnish
  • Black olives for garnish

Instructions

  1. In a blender, combine the queso fresco, yellow chili peppers, evaporated milk, and saltine crackers. Blend until smooth to make the spicy cheese sauce.
  2. In a pan, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft.
  3. Pour the spicy cheese sauce into the pan and cook for 5 minutes, stirring constantly. Season with salt and pepper to taste.
