Ingredients
- 4 large potatoes, boiled and peeled

- 4 saltine crackers
- 2 tablespoons vegetable oil
- 1/2 onion, chopped

Instructions
- In a blender, combine the queso fresco, yellow chili peppers, evaporated milk, and saltine crackers. Blend until smooth to make the spicy cheese sauce.
- In a pan, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft.
- Pour the spicy cheese sauce into the pan and cook for 5 minutes, stirring constantly. Season with salt and pepper to taste.
