Ingredients
- 12 large mushrooms, stems removed and reserved
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup cooked and shredded chicken
- 1 cup cooked rice
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup grated cheese
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Chop the reserved mushroom stems and sauté with the onion, garlic, and red bell pepper until softened.
- Add the shredded chicken, cooked rice, cumin, paprika, salt, and pepper to the sautéed vegetables. Cook for 5 minutes, then remove from heat.
- Stuff each mushroom cap with the chicken and rice mixture, then place them in a baking dish.
- Sprinkle the stuffed mushrooms with grated cheese and bake for 20 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh parsley before serving.
