Potjiekos Stuffed Mushrooms

Ingredients

  • 12 large mushrooms, stems removed and reserved
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup cooked and shredded chicken
  • 1 cup cooked rice
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup grated cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Chop the reserved mushroom stems and sauté with the onion, garlic, and red bell pepper until softened.
  3. Add the shredded chicken, cooked rice, cumin, paprika, salt, and pepper to the sautéed vegetables. Cook for 5 minutes, then remove from heat.
  4. Stuff each mushroom cap with the chicken and rice mixture, then place them in a baking dish.
  5. Sprinkle the stuffed mushrooms with grated cheese and bake for 20 minutes, or until the cheese is melted and bubbly.
  6. Garnish with fresh parsley before serving.
